Mary – Pastry Chef – Mary has been with La Patisserie Francaise for almost it’s entire time open. Mary makes all of our traditional personal French pastries such as the Swans, eclairs, napoleons, Nuns, as well as all our Petit fours, chocolate truffles, and Black Forest, and season favorites like Lemon mousse and the Peppermint Truffle.
Kelly – Dough Chef – Kelly has been with La Patisserie for two years. She makes all of our dough that is the basis for our goods. All the croissant, cinnamon and pecan roll, strudel, and cherry and apple tart dough that makes up our breakfast pastries are made by scratch, by Kelly. Kelly also is the genius behind our macarons and the custom flavors.
Chris – Baker – Chris has been with us for two years. Chris started up front, and quickly moved to the back of the house to bake off our yummy breakfast, breads, and cookies. Chris makes our custard and the Pate a Choux that our eclairs and swan/ nun bodies are made from. Chris has the morning shift, and is in waking the ovens up at 4:00 AM, so you can have yummy treats when we open.
Lynn – Manager / Cakes – Lynn has been with La Patisserie for three years. Lynn is responsible for all of our house cakes such as the Peach Melba, Black Forest, and Mocha buttercream. Lynn makes all of our cakes, filling and icings by scratch. Lynn is also a decorator, and produces all of our Yule logs.
